Well, what you might not know is that the tantalizing tastes you crave at How''s Your Onion? are actually the creations of an award-winning executive chef. Founder, proprietor and chef, Marc-Damian Hartley is no ordinary chef and we know your tastebuds would agree! Marc’s creativity in the kitchen is what makes How’s Your Onion? a must-stop restaurant.
Marc began his restaurant career working at Tony Clamato''s while attending Keene State College. At that time, Marc''s new-found love of creative cooking led him to enter the US Army as a quartermaster.
In 1998, Marc-Damian married his high-school sweetheart, Sandra (she’s not too bad in the kitchen, herself!), and they headed off to Kitzigen, Germany, where Marc served as an Army Shift Leader and Ration Supervisor until 2001. During his time overseas, Marc earned numerous awards as a soldier and chef. Marc was awarded: the Heroic Achievement Award for dedication and leadership, the Army Commendation Medal for Soldier of the Year, and the Army Commendation Medal for exemplary service. Oh, and we can’t forget the awards and achievements for food service and food preparation!

Winner of competitions ranging from food preparation and serving, facility administration, sanitation and hygiene, service operations, and leadership.
After leaving Germany, Marc continued his US Army career as First Cook and Pastry Chef,while stationed at Fort Lee. In early 2003, Marc received an honorable discharge and moved to Massachusetts with Sandra and their two children. Over several years, Marc worked as Executive Chef for Kahunaville, Kitchen Manager for Ted’s Montana Grill, and Manager of Outback Steakhouse in Connecticut.
Marc’s outstanding performance, consistency, dedication and devotion at Outback Steakhouse (reconstructing and developing strong teams, training, enhancing individual and group performances, managing inventory, requisitions and accountability, and scheduling) led to his 2007 entry into Outback proprietorship.
Finally, after three years at the Outback Steakhouse in Concord, NH, Marc-Damian returned to his hometown, Derry, NH, and partnered with his wife Sandra, to bring his extensive and creative food skills to How’s Your Onion?
